Creamy Avocado & White
Bean Wraps
2 tbsp. Cider Vinegar 1 tbsp. Canola Oil 2 tsp. canned Chipotle Chile, chopped 1/4 tsp. Salt 2 cups Red Cabbage, shredded 1/4 cup Fresh Cilantro, chopped 15 oz. can White Beans, rinsed 1 ripe Avocado 1/2 cup Cheddar Cheese, shredded 1 med. Carrot, shredded 2 tbsp. Red Onion, minced 4 8-10" Whole Wheat Tortillas |
Whisk vinegar, oil, chipotle chile, and salt in medium bowl. Add cabbage, carrot and cilantro. Toss to combine. Mash beans and avocado in another medium bowl with a fork. Stir in cheese and onion. To assemble, spread 1/2 cup Bean-Avocado mix on tortilla. Top with 2/3 cup Cabbage mix. Roll up tight, cut in half. Serve with chips and salsa. |
